Louise’s love of cheese and trying to make it at home led her to take a short course in Cheese Making at Washington State University. She then stayed with a family who made cheese from their own dairy cows, for a month. They specialized in Gouda and Cheddar. A requirement for most working the dairy industry is the Dairy Plant Processing course at BCIT. This is where she met Gitta Pedersen, who is the owner of Poplar Grove Cheese and was asked to join their team. She has been with Poplar Grove Cheese for almost 6 years. Louise has also started her own company, Pearson Cheese Company, where she was able to develop an alpine-style cheese called Apex. She also makes French Curd for the store front as well as retailing wine and cheese accessories. Louise can also be found at 8th Generation doing tastings throughout the season. But of course, her favourite thing to do is share her passion of cheese making with you.
